Fermented vegetables are a great way to add some probiotics to your diet.

 

 

 
  1. Sterilize jar. I do this by carefully immersing the jar (and lid) into a large saucepan of boiling water. Boil for 10 minutes; then, using tongs, carefully lift out - with the opening facing away from you
  2. Cut veg into bite-sized pieces.
  3. Add veg to jar include garlic and bay leaves.
  4. Add a couple of tbsps of mustard seeds/ peppercorns or whatever whole spice you fancy – experiment
  5. Dissolve 1tbsp of salt per 460ml filtered water. Make enough to fill the jar and completly cover the veg.
  6. Leave at room temperature for 4 days. 
N.B.It is important to quickly "burp" your jar daily as carbon dioxide is released in the process - do this by slightly opening the jar to release the gas before quickly closing again.


 Then keep it in the fridge for up to 1 month
